Kalau api atas, flamen (elemen pemanas) yang di atas saja yang nyala. Jadi bagian atas kue yang cepat masak bukan bawah. Biasanya ini juga yang dipakai untuk kue lapis, karena bagian dasar dianggap bisa kematangan kalau pakai api atas dan bawah sekaligus
